Carol's Most Delicious Blue Cheese Hamburger
with Caramelized Onions
CARAMELIZED ONIONS
About 5 Large Onions, sliced thinly
2 Tablespoons Unsalted Butter
2 Tablespoons Olive Oil
1 Teaspoon Sugar
1 Teaspoon of Kosher salt
Fresh Herbs (optional)

Place all the ingredients in a heavy frying pan and slowly simmer for at least an hour or until sweet and golden. If you like put a couple of sprigs of fresh herbs in the pan for extra flavor. Stir about every five minutes.


BLUE CHEESE HAMBURGERS
2 pounds of Ground Chuck only. Do not buy lean meat.
5 tablespoons Unsalted Butter at Room Temperature.
1 Cup Crumbled Blue Cheese ~ more if you like.
3 Tablespoons Mayonnaise

Hamburgers Rolls of good quality
Olive Oil for hamburgers
Ancho Chili (optional)
Kosher Salt and Freshly Ground Black Pepper


HERBAL MAYONNAISE
You may use a commercial Mayonnaise (Hellman's preferred) and doctor it up. Here are some choices: Dijon mustard, fresh lemon juice, chili peppers, Jalapeno, Serrano, chopped fine, Horseradish sauce: Gold's or fresh horseradish (grated), ketchup, chili sauce, and fresh herbs of your choice to taste.


PREPARATION
Divide the meat into four patties. With a spoon take out the center of the patty (not going through the bottom). Reserve the centers.

Mix the 2 TBS Unsalted Butter, Blue Cheese, and the Mayonnaise with your clean fingers. Place a heaping tablespoon of this mixture into the center of the hamburgers. Cover with the reserved centers. Season the hamburgers with salt and pepper, and if you like Ancho chili powder.

Lubricate the hamburgers very well with olive oil on both sides.

Season burgers on both sides.

Start to heat your outdoor gas grill 30 minutes before you are ready.

Heat your stovetop grill pan 5 to 10 minutes before using.


Hold your hand carefully about 8 - 10 inches above the grilling surface. If you can keep your hand there for more than twenty seconds, the grill is not hot enough.

If you are using a grill pan, do not oil the pan.

If you are using a gas grill, lubricate it very well with oil.

Place the burgers on the grill and cook until they reach the temperature of your choice. Be sure to give your burgers a quarter turn, to make beautiful marks. When the burgers are done, place the rolls on the grill to toast them on both sides. Be careful not to burn them. Now you are ready to fill the rolls. On both sides of the rolls, spread some Herbal Mayonnaise. Place the hamburger on top and pile with Caramelized onions on top.

Serve immediately.
