Culinary Experience

What’s New…

We are celebrating two anniversaries this year…The first one is the 33rd anniversary of Carol‘s Cuisine Cooking School. The second, is the 12th anniversary of Carol’s Café…which has been a Four Star Restaurant for all of the twelve years we have been open !

This year, Carol taught at the Italian Cooking and Living Institute in Manhattan, and at the Sur La Table Cooking School in Manhasset, NY, and at both locations, her classes were filled to capacity with long waiting lists.

Carol was also featured in the holiday issue of Italian Cooking and Living Magazine, with her recipe for Panettone - a sweet, Italian holiday bread.

Carol’s biography appears in the First Edition of “The International Who's Who of Chefs” book for 2004-2005. Ms. Frazzetta is among almost 3000 of the best chefs from 70 countries worldwide selected for induction after a rigorous screening process.

Carol also considers it an honor for Carol's Cafe to be listed in the Michelin Guide Red book.

The International Association of Cooking Professionals, which demands the highest standards from all its members, certified Carol as a member in 1982, and accredited Carol’s Cuisine in 1986. She was also a member of the New York Association of Cooking Teachers.

Carol has written columns, and feature articles for numerous publications, including the Staten Island Register and the Islander, and was the cooking columnist for the Staten Island Health and Restaurant Guide.

In addition to teaching classes at Carol’s Cuisine Cooking School, since 1972, she taught International Cuisine at the College of Staten Island Continuing Education program, and the Port Richmond High School Culinary Arts program. She also developed and taught classes for participants in the Staten Island Hospital Opti-Fast diet program.

Carol has recently been featured on the TV Food Network's The Bobby Flay Show: Sicilian Grilling, and had her own show on SI Cable Channel 76 - The Happy Cooker - hosted by news anchor Alicia Vitarelli.

Carol has also appeared on numerous Television Programs including; Staten Island Live, TV Food Network's - “Dining Around”, which highlighted Carol’s Café and Pub (the first time a Staten Island restaurant was reviewed on the TV Food Network), and in a documentary on NBC’s Channel 4 about Staten Island, hosted by Ralph Penza . Staten Island Cable also did an hour long program about Carol and a cooking class titled “Dining on Lobster”, and her food has been featured in the movie “All Fall Down“ (featuring Anthony LaPaglia, Isabella Rossellini and Viola Davis), and also in the television soap opera “Another World“.

Carol has been interviewed and featured in the New York Times, the New York Daily News, the Staten Island Advance, The Staten Island Register, the Islander and the Staten Island Health and Restaurant Guide.

Her recipes appear in the James Beard Celebration Cookbook, the International Association of Cooking Professionals Cookbook.

 Carol has also written her first cookbook Carol’s Café Pasta Sauces, and is currently working on her second book, which will feature her favorite recipes, along with anecdotes about her lifelong experiences in becoming a Chef.

Carol is the owner, director and teacher at Carol’s Cuisine School of Creative Cooking, which she founded in 1972 in Staten Island.

She also owns, operates and is the Executive Chef and Pastry Chef of the Four-Star Restaurant ~ Carol’s Café, which the prestigious Zagat Restaurant Guide calls “The Best Restaurant Staten Island has to offer…Worth the cab ride or drive.” Chef-Owner Carol Frazzetta’s “Masterful touch” is evident in her Staten Island Eclectic’s “lovingly prepared”, “innovative” cuisine, “engaging” service and “Greenwich Village—like” ambiance.

Carol has been a successful caterer since 1975.

She continues to lecture at various schools, Guilds and Associations
