Sate Marinade & Peanut Sauce
MARINADE INGREDIENTS
3/4 Cup Minced Onion
3/4 Cup Peanut Oil
Fresh Lemon Juice ~ to taste
3 Tablespoons Soy Sauce
2 Tablespoons Dry Sherry
1 Tablespoon Sugar
1 Tablespoon peeled and minced Ginger Root
3 ~ 5 Garlic Cloves, minced
1 Teaspoon Red Pepper Flakes
1 Teaspoon Kosher Salt


MARINADE PREPARATION
In a ceramic or glass bowl, combine all the ingredients and mix well. Use the marinade to marinate the Pork Cubes ~ or ~ Chicken Cubes in the refrigerator overnight.



PEANUT SAUCE INGREDIENTS
4 Tablespoons Smooth Peanut Butter ~ or more to taste
1 Tablespoon Soy Sauce
1 Cup of Heavy Cream
Kosher Salt ~ to taste
Serrano Chili Pepper ~ chopped fine (optional)
Red Pepper Flakes ~ to taste


PEANUT SAUCE PREPARATION
Drain the Meat, reserving the marinade.
In a food processor fitted with the steel blade ~ or ~ in a blender, puree the reserved marinade with the 4 Tablespoons Smooth Peanut Butter, and 1 Tablespoon Soy Sauce. With the motor running, add 1 Cup of Heavy Cream in a stream into the food processor/blender.

Transfer the sauce to a stainless steel or enameled saucepan. Bring it to a simmer, and simmer until the sauce is thickened slightly.

Add spice to taste

Serve the Peanut Sauce with the Grilled Pork or Grilled Chicken.

Makes about 1 ½ Cups of Peanut Sauce


SKEWERS
Use 6 inch Wooden Skewers that have been soaking in water at least 1 hour before cooking ~ this will prevent them from burning.

Note: When Skewering the Meat, leave a small space between each piece, so the meat does not steam.


MEAT PREPARATION
One Boneless Pork Loin (about 2 pounds) ~ or ~
Boneless Chicken Breasts (about 2 pounds)

Cut the meat into 1 ½ inch cubes.


Skewer the Meat, and grill until cooked through. Do not overcook.


Serve the Sate Skewers with the Peanut Sauce
